200g Birch & Waite Italian Dressing
1 x 400g tin Black Beans, rinsed and drained
2 Jalapeno, finely chopped
1 Red Capsicum, diced
1 medium Avocado, diced
6 Spring Onion, finely sliced
1 x 400g tin Corn Kernals, drained
4 medium Roma tomatoes, diced
¼ bunch Coriander, roughly chopped
2 Limes, Zest and Juice (optional)
1. Prepare quinoa as per directions on the packet
2. Combine with all salad ingredients. Toss gently.
3. Dress with Birch & Waite Italian Dressing
Add pan fried chorizo slices to add extra protein to this salad. Also suitable as a filling for a wrap.
