200g Birch & Waite French Vinaigrette

8 Rainbow Carrots (purple, orange and yellow), thinly sliced lengthwise

3 Zucchini, thinly sliced lengthwise

2 Lebanese Cucumbers, thinly sliced lengthwise

1 Fennel Bulb, thinly sliced cut in wedges

8 Radishes, thinly sliced

Micro herbs

Method

  1. Prepare salad ingredients
  2. Combine in a salad bowl or on a platter
  3. Dress with Birch & Waite French Vinaigrette and garnish with micro herbs

Chef's Tip

Place carrot slices in iced water for 1 hour to make them curl for presentation.
